Finally! This weekend I got the chance to bake something new- Strawberry Tarts because my mum said so.
This is another very easy peasy recipe which you can modify on your own. So lets dig into the recipe :D
Ingredients:
-For pastry
175g (6oz) plain flour
1oz icing sugar
1 egg
100gm butter
3-4Tbsp icy cold water
-For filling
strawberries (washed and cut in halves vertically)
vanilla custard or lemon curd or any other thing you like
cream
-For glaze
2Tbsp redcurrant jam/jelly
2Tbsp hot boiling water
Method:
-In a bowl, get all the ingredients for the dough except for the egg and water.
With your fingers, crumble the butter with dry ingredients. [The tip is to use your fingers instead of palms.] Or simply you can blitz this in processor untile like bread crumbs. Next add a beaten egg and water as much as required to form a nice firm dough.
Keep the dough in the fridge for atleast half an hour or pop up in the freezer for 15mins.
Next, roll the dough and cut circullar discs and line them in the tin. Prick them with fork.
Bake them for 8-12mins until light golden in color. [blind bake]
Cool the pastry shells.
-Mix the jam/jelly with water for the glaze.
-I mixed the cream in custard, it's totally upto you how you like to fill these tarts.
-Brush the shells from inside with the glaze-this will prevent them from getting soggy.
-Fill the shells with custard.
-Top with berries and final coat of glaze and voila pretty tarts are ready to be vanished! ;)
