Simple Chicken and Rice?

I'm so fond of dishes inspired by Arabic cuisine. Recently, I tried this whole chicken with some rice that turned out to be really great. You might wanna look at it.









Ingredients:
1 whole chicken
1tsp red chilli pwd
1tsp garam masala pwd
1tsp salt
1Tbsp vinegar
1 onion diced
4-5Tbsp oil
3-4Tbsp butter
1 1/2tsp ginger garlic paste
1/2 tsp red chilli pwd (optional)
3-4Tbsp beaten yoghurt
raisins as much as you like
a pinch of food color

Method:
STEP#1. You know that you have to cook with love.
STEP#2. Rub garam masla pwd, red chilli pwd, salt and vinegar on chicken. Prick some cuts on it and leave it to marinade for a while. (15mins atleast)

STEP#3. In a pot, add onions, oil, 2tbsp butter and chicken.


STEP#4.Fry the chicken until it gets a nice golden color on both sides. Add ginger garlic paste. Then add 4-5cups of water and let cook with the lid on the top until chicken is tender,

STEP#5.Remove the chicken from the pot and keep it aside.


STEP#6. Then in the remaining stock, add rice, salt and more spices if you like. You can add additional water if required.

STEP#7. When the rice is almost cooked, pour the yoghurt over the top, add food color and put chicken on the top and cover the lid. Cook on very low heat until the steam is created and rice is nice and fluffy. (this is called in Urdu as giving 'dumm' to the rice)
STEP#8. In a pan, heat butter and fry the raisins in it until they are nice and fluffy. Sprinke them over he rice and drizzle this butter on chicken too.

When one dish turns out to be infinite dishes. . .

Monotonous days aren't liked by anyone and one of the ways to add some bang bang in life is to plan hangout with your friends. And a more awesome way is to have 'One-Dish Party', really?
In this way everyone contributes with just one one dish each and voila you get loads of dishes prepared! and what they say penny penny makes a huge amount is illustrated yummylicously :D
It's super fun and easy to arrange and you will  get loads of new recipes and flavors to try yourself. ^_^

Viennese Biscuits

Homemade biscuits are a big treat for those who appreciate quality flavors. The one fond with baking always love to try new new types of recipe that surely increase his or her baking skills and moreover his or her closed ones love him or her more -if you know what I mean :D

These Viennese Biscuits are pretty at looks and taste amazing too :p This recipe is from one of my favorite baking books.

Ingredients:
For the biscuits:
175g unsalted butter, softened
40g icing sugar
1tsp vanilla essence
175g plain flour
40g cornflour

For the ganache:
75g plain or milk chocolate
4Tbsp double cream

Method:
STEP#1. Bake with love :)
STEP#2. Heat the oven to 190C. Grease and line two baking trays.
STEP#3. Put the butter in a bowl. Sift icing sugar over it. Beat the mixture until it is creamy and stir in vanilla essence.
STEP#4. Sift the flour and cornflour over the mixture. Stir them in until they are smooth.
STEP#5. Put a teaspoon of the mixture onto trays, leaving spaces between them. Flatten each bob of the mixture slightly with the back of teaspoon.
STEP#6. Bake the biscuits for 12-14mins until they are pale golden brown. Leave them on their trays for five mins, then use a spatula to lift them onto a wire rack.
STEP#7. For the ganache: melt the chocolate over a double boiler. Cool it for a couple of mins and mix in the cream. Put it in the fridge for about an hour, stirring it every now and then as it thickens.
STEP#8. When the ganache is soft like butter, take it out of fridge. Use a blunt knife to spread some on the flat side of a biscuit. Press another biscuit on top. Sandwich all the biscuits in this way.
STEP#9. Eat them straight away, or keep them in an airtight container in the fridge.

Easy Desi Mutabakh Version

If you have little interest in Arabic cuisine, you would have tasted and tried 'mutabakh'. Its a paratha filled with some qeema [mince], some spring onions and egg and it tastes yummilicious when served warm! :3
The pastry sheet is often lined with filo pastry in the centre so that the paratha can handle the weight of filling.
This version of mine isn't the original mutabakh but something I have discovered along the journey of food [when I tried to come up with the only ingredients that were available in my kiitchen and I was super hungry :D ]

There is no particular ingredients list for this one because this version is totally upon your preferences and choices and the availability of ingredients.

Atleast you need:
frozen parathas (2 make 1 i.e 1 for each side)
beaten eggs (1 egg makes good filling for one paratha)
vegetables-this is totally upto your choice: chooped spring onions, green chillies, coriander leaves or even some tomatoes.
cooked mince (if you don't have i, you can still make without the mince)
salt and black pepper pwd or red chilli flakes
and obviously some oil

Method:
STEP#1. You're gonna make with love :)
STEP#2. Mix vegetables, seasoning and mince in eggs.
STEP#3. Cook the eggs mixture on medium heat for a couple of mins, just slightly so that the mixture is sticky but not too much cooked.
STEP#4. Put little oil on a flat pan and put one paratha on it. Put some filling on it too. (the quantity of filling depends on how much you like it :b )
STEP#5. Put another paratha over it. With a fork press over the sides.
STEP#6. Cook it well on both sides, adding more oil. Press well at the centre so that the egg is nicely cooked.
STEP#7. Serve with lemon wedges.

Dessert Fusion

I like to call it 'cheesecake fusion' because this one is inspired from cheesecake.
But instead of making the base from biscuits, I use vermicelli! Sounds interesting na? :) And it tastes amazing too. My brothers love this more :D
It's not like that you can cut a slice out of it but you can do that too by following the original cheese cake mixture recipe instead. My vermicelli base isn't that stiff like that in the original cheesecake, but you can do that too by addin 1/2cup of milk instead and baking/cooling the base for some time. [I haven't tried this, but I guess it will work.]

Ingredients:
a packet of vermicelli
3-5tbsp of butter
3-4Tbsp of milk
250ml of qushta cream or regular packet cream
4-5tbsp cream-cheese
3-5tbsp condensed milk

Method:
STEP#1. Remind yourself you're gonna cook with love.
STEP#2. Crush the vermicelli. [by putting them in a plastic bag and rolling a rolling pin over them or by hands]
STEP#3. Roast the vermicelli in butter, add milk and cover for a couple of mins at very low heat. Make with it the base of ur cheesecake. Let it cool for few mins.


STEP#4. In a bowl beat cream , add cream-cheese and condensed milk (according to ur flavours, you can increase/decrease the quantity of these)
STEP#5. Pour this over the base, top with pistachios or whatever you like.
STEP#6. Chill it & go woolalalalalala!:D

Naan :3

I always love to make these flat breads at home. The warm warm naan served with any of your favourite curry is always yummylicious [:
They are super easy to make and taste amazing!
You can make them in any flavour you like, by topping them up with your preferred ingredient [eg:crushed garlic mixed in butter, chopped coriander, seasame seeds or nigella seeds...]

Ingredients:
3cup flour
3tsp yeast
3/4tsp salt
3-5Tbsp milk powder
1 egg
2Tbsp olive oil
luke warm water-to kneed

Method:
STEP#1.You're gonna make them with love d:
STEP#2.Warm the water until its lukewarm. [Tip: when you touch the water, you should feel it as slightly warm. nowhere near too hot and shouldn't burn your hands]
STEP#3.In a bowl, mix yeast, sugar and little bit of water and keep aside for 3-5mins. When you see bubbles appearing on your yeast mixture, it means your yeast is perfectly working and inshaAllah your dough will rise perfectly 
STEP#4.In a big bowl, mix all the ingredients and make a soft dough using as much luke warm water as required. [Tip: the softer the dough, the better the results inshaAllah]
STEP#5.Now comes the muscular work  kneed and kneed the dough on a wooden board or marble slab (dusting a little flour time by time if required) until its smooth. (you'll feel the differnce yourself )
Put the dough in a greased bowl, cover it and leave it until it rises. (the time it takes depends on weather) [Tip: in winters, keep the dough in a warm place to make it rise quickly]
STEP#6.Make balls from the dough. [the size depends on how big naan you want]
STEP#7.Roll them into circular discs. Top with any of your favourite ingredient [eg:crushed garlic mixed in butter, chopped coriander, seasame seeds or nigella seeds...] and make impressions with your fingers.
STEP#8. Bake in a preheated oven at 200-220C for 6-10mins or until nice and golden.
You can brush them with a little butter if you like [:
