Viennese Biscuits

Homemade biscuits are a big treat for those who appreciate quality flavors. The one fond with baking always love to try new new types of recipe that surely increase his or her baking skills and moreover his or her closed ones love him or her more -if you know what I mean :D

These Viennese Biscuits are pretty at looks and taste amazing too :p This recipe is from one of my favorite baking books.

Ingredients:
For the biscuits:
175g unsalted butter, softened
40g icing sugar
1tsp vanilla essence
175g plain flour
40g cornflour

For the ganache:
75g plain or milk chocolate
4Tbsp double cream

Method:
STEP#1. Bake with love :)
STEP#2. Heat the oven to 190C. Grease and line two baking trays.
STEP#3. Put the butter in a bowl. Sift icing sugar over it. Beat the mixture until it is creamy and stir in vanilla essence.
STEP#4. Sift the flour and cornflour over the mixture. Stir them in until they are smooth.
STEP#5. Put a teaspoon of the mixture onto trays, leaving spaces between them. Flatten each bob of the mixture slightly with the back of teaspoon.
STEP#6. Bake the biscuits for 12-14mins until they are pale golden brown. Leave them on their trays for five mins, then use a spatula to lift them onto a wire rack.
STEP#7. For the ganache: melt the chocolate over a double boiler. Cool it for a couple of mins and mix in the cream. Put it in the fridge for about an hour, stirring it every now and then as it thickens.
STEP#8. When the ganache is soft like butter, take it out of fridge. Use a blunt knife to spread some on the flat side of a biscuit. Press another biscuit on top. Sandwich all the biscuits in this way.
STEP#9. Eat them straight away, or keep them in an airtight container in the fridge.
